Fresh, vibrant, and full of warm Moroccan flavours - this Moroccan Inspired Orzo Salad is a colourful dish perfect for sharing or meal prepping for the week.
You will need:
For the salad:
350 g orzo
Rocket
Coriander
Pomegranate arils
Hummus
For the mince:
500 g beef mince
1 onion, finely chopped
4 tbsp ras el hanout
¼ tsp chilli powder
2 tbsp pine nuts
½ cup water
22 ml Just Fresh Co Lemon Juice (1½ tbsp)
Handful flat leaf parsley, roughly chopped
Oil
Salt & pepper
For the yoghurt sauce:
½ cup yoghurt
15 ml Just Fresh Co Lemon Juice (1 tbsp)
1 tsp cumin
Salt & pepper
Method:
- Cook orzo in salted boiling water according to packet instructions.
- While that’s cooking, heat oil in a pan and fry the onion until soft. Add the mince and cook through.
- Add spices, water, salt and pepper. Reduce heat and let simmer for a few minutes.
- Stir through pine nuts, lemon juice and parsley, then remove from heat.
- For the yoghurt sauce, mix all ingredients together in a bowl.
- Drain the orzo, toss with a little olive oil, then mix through the hot mince.
- Add rocket and stir through.
- Top with yoghurt sauce, coriander, pomegranate and spoonfuls of hummus.
