Turmeric Roasted Vegetables

Golden, warming, and full of flavour - these Turmeric Roasted Vegetables are a simple way to bring colour and comfort to any meal.

You will need:

2 cups chopped vegetables
(carrots, cauliflower, kūmara work beautifully)
1 tbsp olive oil
1 tbsp Just Fresh Co Turmeric Juice
Salt and pepper
Optional: cumin or paprika

Method:

  1. Preheat oven to 200°C.
  2. Toss vegetables with olive oil, turmeric juice, salt and pepper until evenly coated.
  3. Spread onto a baking tray in a single layer.
  4. Roast for 25–30 minutes, until golden and tender.
