Zesty, fragrant, and packed with bold flavour — this Lime and Coriander Chicken is an easy crowd-pleaser perfect for weeknight dinners or weekend tacos.
You will need:
6–8 skinless, boneless chicken thighs
2 tbsp paprika
2 tbsp ground cumin
1 tsp garlic powder
1 cup chopped coriander
80 ml Just Fresh Co Lime Juice
60 ml oil (¼ cup), plus extra for cooking
1 tsp salt
1 tsp ground white pepper
Method:
- Place the spices, coriander, lime juice, oil, salt and pepper into a bowl and mix well.
- Add the chicken thighs and mix until well coated. Cover and place in the fridge to marinate for at least 30 minutes.
- When ready to cook, preheat your oven to 180°C fan and line a baking tray.
- Heat a little oil in a pan and fry the chicken in batches until lightly browned, then transfer to the tray.
- Bake for 10–15 minutes, or until cooked through.
- Remove from the oven and drizzle over the pan juices.
- Serve with rice, black beans and guacamole — or pile into tacos.
