Lime and Coriander Chicken

Zesty, fragrant, and packed with bold flavour — this Lime and Coriander Chicken is an easy crowd-pleaser perfect for weeknight dinners or weekend tacos.

You will need:

6–8 skinless, boneless chicken thighs

2 tbsp paprika
2 tbsp ground cumin
1 tsp garlic powder

1 cup chopped coriander
80 ml Just Fresh Co Lime Juice
60 ml oil (¼ cup), plus extra for cooking

1 tsp salt
1 tsp ground white pepper

Method:

  1. Place the spices, coriander, lime juice, oil, salt and pepper into a bowl and mix well.
  2. Add the chicken thighs and mix until well coated. Cover and place in the fridge to marinate for at least 30 minutes.
  3. When ready to cook, preheat your oven to 180°C fan and line a baking tray.
  4. Heat a little oil in a pan and fry the chicken in batches until lightly browned, then transfer to the tray.
  5. Bake for 10–15 minutes, or until cooked through.
  6. Remove from the oven and drizzle over the pan juices.
  7. Serve with rice, black beans and guacamole — or pile into tacos.
