Ginger Hot Cross Buns

Soft, warmly spiced, and filled with a gentle ginger kick — these Ginger Hot Cross Buns are a comforting homemade treat perfect for sharing.

You will need:

3 cups self-raising flour
2 tsp mixed spice
½ tsp cinnamon
½ cup brown sugar
1 cup milk
45 ml Just Fresh Co Ginger Juice
60 g butter, melted
1 cup raisins or sultanas

For the crosses:

½ cup flour
Water (to make a thick paste)

For the glaze:

15 ml Just Fresh Co Lemon Juice
2 tbsp maple syrup or honey

Method:

  1. Preheat oven to 180°C fan and line a baking tray.
  2. In a bowl, mix flour, spices, sugar and raisins.
  3. Add milk, melted butter and ginger juice, then stir to form a soft dough.
  4. Divide into 9–12 buns and place onto the tray.
  5. Mix flour and water to make a thick paste, then pipe crosses onto each bun.
  6. Bake for 20–25 minutes, until golden.
  7. While still warm, brush with lemon and maple glaze.
  8. Serve warm with butter.
