Fresh, crunchy, creamy: Turmeric Pad Thai

Looking for something fresh, fast, and full of flavour? Meet our Raw Pad Thai with Turmeric Sauce - a crunchy, colourful twist on a classic Thai dish with a creamy turmeric kick.

Ingredients:

2 cups shredded rainbow veggies (carrot, cabbage, beetroot)

Turmeric Sauce:

1/2 fresh lemon, juiced (or 2 tbsp tamarind concentrate)

2 tbsp peanut butter

2 tbsp Just Fresh Co Turmeric Juice

1/2 cup Greek yoghurt

Optional:

1 tsp fish sauce

Toppings:

Roasted peanuts

Sesame seeds

Crispy shallots

Method:

Whisk together the sauce until smooth and creamy. Drizzle over the shredded veggies (or your favourite salad mix). Finish with crunchy toppings and enjoy raw, fresh goodness in every bite!

Tip: For a plant-based swap, use a thick coconut yoghurt and skip the fish sauce.
