Gently poached in a ginger, cinnamon and honey syrup, these pears make a simple but elegant dessert. Just Fresh Ginger Juice adds warming flavour, while lemon brings a little brightness. Serve warm with vanilla ice cream or chilled with a spoonful of Greek yoghurt.
Ingredients

4 firm pears, peeled, stems left intact

4 tbsp Just Fresh Ginger Juice

750ml water

100g brown sugar
-
2 tbsp honey
-
1 cinnamon stick

1 tsp vanilla extract

2 strips lemon peel

1 tbsp Just Fresh Lemon Juice
To serve

Greek yoghurt, mascarpone or vanilla ice cream

Chopped toasted almonds or pistachios, optional
Method

Add the water, Just Fresh Ginger Juice, brown sugar, honey, cinnamon stick, vanilla, lemon peel and Just Fresh Lemon Juice to a saucepan large enough to hold the pears.

Bring to a gentle simmer, stirring until the sugar has dissolved.

Add the pears and partially cover the pan. Simmer gently for 20–25 minutes, turning occasionally, until tender but still holding their shape.

Carefully remove the pears and set aside.

Increase the heat and simmer the poaching liquid for another 8–10 minutes, or until reduced to a light syrup.

Remove the cinnamon stick and lemon peel. Serve the pears warm or chilled with yoghurt, mascarpone or vanilla ice cream.

Spoon over the ginger syrup and scatter with toasted nuts, if using.
