Coconut & Cardamom Sago with Lime Curd + Mango

Ingredients

Lime Curd:

Coconut Sago:

  • ½ cup sago

  • 3 cardamom pods

  • 2½ cups water

  • ½ cup coconut cream

  • 3 tbsp coconut sugar

To serve:

  • Diced mango (fresh, tinned, or frozen)

Method

Lime Curd:

  1. Add cornflour, sugar, lime juice, plant milk, and turmeric juice to a saucepan.

  2. Place over medium heat, whisking constantly until thick and smooth.

  3. Remove from heat and set aside to cool.

Coconut Sago:

  1. Add sago, cardamom pods, and water to a saucepan.

  2. Bring to the boil, then reduce heat and simmer, stirring constantly, until sago is mostly clear and thick.

  3. Remove from heat and stir through coconut cream and coconut sugar.

  4. Discard cardamom pods.

Assembly:

  1. Layer spoonfuls of coconut sago, a few teaspoons of lime curd, and diced mango.

  2. Refrigerate until ready to serve.
