Turmeric & Ginger Golden Milk Cake

Golden Milk Cake (cuts into 10–12 pieces)

Ingredients

For the cake:

  • 200g plain flour

  • ½ tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • ½ cup milk

  • ¼ tsp cinnamon

  • ¼ tsp cardamom

  • ¼ tsp freshly ground black pepper

  • 1 tsp Just Fresh Co Turmeric Juice

  • 1 tsp Just Fresh Co Ginger Juice

  • ¼ tsp vanilla paste

  • ¼ cup Greek yoghurt

  • 200g caster sugar

  • 3 eggs

For the glaze:

Method

  1. Preheat oven to 170°C and grease and flour a bundt tin.

  2. Combine flour, baking powder, baking soda, and salt in a small bowl.

  3. Gently heat milk, spices, ginger juice, turmeric juice, and vanilla until warm (do not boil). Remove from heat, cool for 5 minutes, then stir in yoghurt.

  4. Beat eggs and sugar together until pale and doubled in volume.

  5. Alternate adding flour mixture and milk mixture in thirds, beating until just combined.

  6. Pour batter into prepared tin and bake for around 30 minutes, or until a skewer inserted comes out clean.

  7. Cool in tin for 10 minutes, then turn out onto a rack and cool completely.

Glaze:

  1. Mix icing sugar, ginger juice, turmeric juice, and salt in a bowl.

  2. Add milk gradually until thick and glossy.

  3. Spoon over cooled cake and finish with crystallised ginger, if using.
