4 salmon fillets

3 tbsp Just Fresh Ginger Juice

2 tbsp honey

2 tbsp soy sauce

1 tbsp Just Fresh Lime Juice

1 tbsp sesame oil

2 garlic cloves, crushed

1 tsp rice vinegar
-
½ tsp chilli flakes, optional

1 tsp cornflour mixed with 1 tbsp cold water

Method

Preheat the oven to 200°C (180°C fan).

Whisk together the Just Fresh Ginger Juice, honey, soy sauce, Just Fresh Lime Juice, sesame oil, garlic, rice vinegar and optional chilli flakes.

Place the salmon fillets in a baking dish. Spoon half the glaze over the salmon, keeping the remaining half separate.

Bake for 12–15 minutes, depending on the thickness of the fillets, until cooked through and the flesh flakes easily.

Meanwhile, pour the reserved glaze into a small saucepan and bring to a gentle simmer. Stir in the cornflour mixture and cook for 1–2 minutes until glossy and slightly thickened.

Spoon the thickened glaze over the cooked salmon. Serve with steamed rice and greens, then finish with spring onions, sesame seeds and lime wedges.
