Creamy, cheesy and finished with a crisp golden topping, this turmeric mac and cheese puts a simple twist on a comfort-food favourite. Just Fresh Turmeric Juice adds golden colour and a gentle earthy flavour to the rich cheddar and Parmesan sauce.
Ingredients

300g macaroni

40g butter

40g plain flour

500ml milk

2–3 tbsp Just Fresh Turmeric Juice

1 tsp Dijon mustard

½ tsp garlic powder

150g mature cheddar, grated

50g Parmesan, grated

Salt and black pepper, to taste
For the topping

30g panko breadcrumbs
-
20g Parmesan, grated

1 tbsp melted butter
Method

Preheat the oven to 200°C (180°C fan). Cook the macaroni in salted water until just al dente, then drain and set aside.

Melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1 minute.

Gradually whisk in the milk until smooth. Cook for 3–4 minutes, stirring, until the sauce begins to thicken.

Reduce the heat to low and stir in the Just Fresh Turmeric Juice, Dijon mustard and garlic powder.

Add the cheddar and Parmesan, stirring until melted and smooth. Season with salt and black pepper.

Fold through the cooked macaroni and transfer to a baking dish.

Mix the panko breadcrumbs, extra Parmesan and melted butter, then scatter over the macaroni.

Bake for around 15 minutes, until bubbling and golden. For an extra-crispy topping, finish under the grill for 1–2 minutes, watching closely.
